Fantastic Fruit Salsa Recipe

Fantastic Fruit Salsa

If you haven't figured it out by now, I'm a bit of an adventurous eater and I love trying new things. I'm also all about as Fresh as I can get, because well, Fresh just tastes better!

One of my favorite types of combinations is mixing sweet with savory or sweet with spicy. That's exactly what this recipe is! A delicious mix of both sweet and spicy and a little bit savory. :)

I could literally eat this salsa all by itself as a meal! It's also great with grilled chicken, fish, rice, with tortilla chips or as a salad topping or with anything else you can think to pair it with.

So without any further ado, here is the recipe for Fantastic Fruit Salsa!

Ingredients:
1 Peach or Mango (Or Both if you prefer)
1 Red Bell Pepper
12 Strawberries
3 Green Onions
1 Tbsp Fresh Cilantro (Chopped fine)
2 Tbsp Lime Juice
1/4 Tsp Sea Salt
1 Tsp Stevia in the Raw or Sugar
Garlic Salt to Taste (optional)

Dice all fruits and vegetables into bite sized pieces, chop cilantro leaves finely and add all fruits and vegetables to a medium sized bowl.

Add Lime Juice, Sea Salt & Stevia/Sugar to mixture of fruits and veggies. Mix thoroughly together and chill in refrigerator for 20-30 minutes prior to serving.

You can add a little garlic salt to the mixture if you want something a little more savory than sweet. :)

Serve with your favorite grilled chicken, fish, rice, or whatever you choose.

As always, if you try this recipe, I'd love to know how you liked it!

Enjoy!

Have a great day and thanks for stopping by The Perfect Knot!

Curried Chicken Salad Recipe

Curried Chicken Salad Recipe

This is not your "typical" Chicken Salad recipe! It's light, has an amazing blend of savory and sweet with just enough spice to keep it interesting!

If you like something easy and quick for those warmer days that can be totally tasty & versatile then this is a great choice for you!

Curried Chicken Salad Recipe

Ingredients:

12.5 oz can of Chicken Breast or 12.5 oz of cooked shredded Chicken Breast
1/4 Cup of Light Mayo
2 Stalks of Celery (Diced)
10 - 12 Green Grapes (Diced into quarters)
1/2 - 1 Tsp Yellow Curry Powder (Use less if you don't want it as spicy, use more if you want it spicier.)
1/4 Tsp Garlic Salt
Salt and Pepper to Taste
1/4 Cup Chopped Walnuts

Whole Wheat Flat Bread, Pita Pocket, Bun, Croissant or Tortilla (Your choice.)

Add the first 8 Ingredients into a bowl & mix well together. Serve on Flat Bread, or other option of your choice. Pair with fresh melon or other fruit for an added sweet fresh taste.

TIP: Chill in refrigerator for at least 1 hour to let the curry flavor really set into your meat mixture. This is one of those "Better the next day" type of recipes in my opinion.

Serves 3-4.

Enjoy!

Mexican Night Leftovers Breakfast Burritos

My family loves Mexican food! We have at least one Mexican meal every week & the great thing is, there is always a little bit of the meat left over!

So whenever I can, I try to make a breakfast burrito the next morning. ;)

Here's a quick, easy & much cheaper (& healthier) than fast food recipe for you to enjoy too!

INGREDIENTS

1/8 to 1/4 Cup Leftover Taco Seasoned Ground Meat or Chicken
1 Egg
1 Small Soft Tortilla (Flour, corn, wheat or whole grain)
1/8 Tsp Cilantro
1/8 Tsp Dried Minced Onions
1/8 Tsp Lawry's Seasoned Pepper
1 Tbsp Shredded Mexican blend Cheeses
2 Tbsp of Your Favorite Salsa

DIRECTIONS

In small pan spray some non-stick cooking spray & use a medium heat. Add Egg, Cilantro, Minced Onion, & Lawry's Seasoned Pepper. Scramble egg & cook until done.
Add Warm Meat, Egg & Cheese to Tortilla, let Cheese melt slightly & add Salsa. Wrap up in a burrito & eat.

Great for breakfast on the go or eat it at home!

You're on your way to a great day with a quick healthy starting breakfast!

Enjoy!
